First and foremost, choose the right cut of steak. Cuts like ribeye, sirloin, and T-bone are excellent choices due to their marbling and flavor.Next, make sure your grill is properly prepared. Start by lighting the charcoal and allowing it to burn until it is covered with a layer of white ash. This usually takes about 15-20 minutes. Spread the coals evenly under the grill grate for a consistent cooking surface.
Season your steak generously with salt and pepper, and if desired, a marinade or dry rub. Allow the steak to come to room temperature before grilling, which helps it cook more evenly.
For perfect grill marks and a juicy steak, use the two-zone cooking method. Sear the steak over direct heat for 2-3 minutes on each side, then move it to indirect heat to finish cooking to your preferred level of doneness.
Use a meat thermometer to check the internal temperature: 130°F for medium-rare, 140°F for medium, and 150°F for medium-well.
Avoid pressing down on the steak with a spatula, as this can cause the juices to escape, resulting in a dryer steak.
